Ingredients:

1. Pinch salt
2. 4 medium-sized potatoes, peeled
3. 1 small onion, or spring onion,
chopped
4. 1 tbsp vinegar
5. ¼ cup mayonnaise
6. 2 tsp chopped parsley or mint
(optional)
7. ¼ cup plain low-fat yogurt
8. 1 tsp American mustard (optional)

Method:

1. Wash potatoes and peel. Place in a pot
of water and bring to the boil.
2. Turn stove down and simmer for
20mins until firm but cooked through.
3. Drain the water off.
4. Cut potatoes into small pieces.
5. Combine onion with potato and mix
with vinegar while still warm. Leave
to cool.
6. Mix the yoghurt and mayonnaise
together. When the potatoes are cool,
mix these in with the mayonnaise
mixture.
7. Cover and place in refrigerator for at
least an hour before serving
